Chicken Stir Fry

Yield: 4 servings

Ingredients

1 cup chicken broth

1 T soy sauce

1 T corn starch

½ t ground ginger

¼ t crushed red pepper

2 T mazola oil, divided

4 cups cut up fresh vegetables

2 cloves garlic, minced

¾ pound boneless, skinless chicken breasts, thinly sliced

Directions

In bowl, stir first 5 ingredients; set aside.

In skillet heat 1 Tbsp. Oil over medium-high heat.  Add vegetables and garlic; stir fry 3 minutes or until tender-crisp; remove.

Heat remaining 1 Tbsp. Oil.  Add chicken; stir fry 4 minutes or until cooked through.  Return vegetables.

Stir broth mixture; add to skillet.  Stirring constantly, bring to a boil; boil 1 minute.
