One-Pot Chorizo Broccoli Pasta Yield: 4 cups Prep time: 10 min Total time: 30 min Ingredients 1/2 white onion, diced, (about 3/4 cup) 8 ounces chorizo 4 cloves garlic, minced 2 cups low-sodium chicken broth 1-1/2 cups heavy cream 1/2 t dried rosemary 1-1/2 cups medium pasta shells (or any other small shape pasta) 1-1/2 cups broccoli florets 1/4 cup grated Parmesan cheese , (more for topping) Directions Add the onion and sautee for a couple of minutes. Add the sausage. Brown and crumble the sausage. Add the garlic for the last 30 seconds of cooking Pour in the chicken broth, cream, rosemary, pasta, and broccoli (see note). Bring to a boil and cook for 10-15 minutes or until sauce thickens (mine thickens around 12 minutes). Stir in the Parmesan cheese and add salt if needed. Serve immediately with additional grated Parmesan cheese on top. Notes If you like your broccoli a little more firm add the broccoli halfway during cooking.
