Energy Balls Yield: 48 Prep time: 10 min Total time: 10 min Ingredients 2 cups old-fashioned oats 1 cup semi-sweet chocolate chips, (you can also use mini chocolate chips, raisins, dried cranberrries) 1 cup ground flaxseed 1 cup creamy or crunchy peanut butter 2/3 cup honey 2 teaspoon vanilla extract Directions Mix dry ingredients into a bowl and mix. Mix wet ingredients into a glass measuring cup. (Put in microwave for 30-60 seconds on low to make mixing easier if desired). Mix everything together well. Form into balls. Freeze on cutting board in freezer. Once firmer, store in a zip lock bag in the freezer. Notes You can also use quick oats but you may need add less since they will cause the balls to be dryer. Ground flaxseed can be found in the spice aisle or health food aisle of your grocery store. I buy a big can of it. You can also add chia seeds (about a tablespoon) if you have them. You can use chocolate chips (mini or regular) or even mini-m&ms for a fun treat! |
